Home watch is a regular, documented inspection of a vacant home: someone checks the property inside and out and sends you a report. Property management is broader, adding vendor coordination, repairs, maintenance scheduling, and project oversight. If you just want eyes on an empty house, choose home watch. If you want someone running the whole property, choose management. Many owners combine both.
